- 200g quinoa (what's quinoa?)
- 50g amaranth
- 1 tsp vegetable stock powder
- 1/3 zucchini
- 1/2 onion
- pepper, salt, curry
- 3 eggs
- 5 stems of chive
- butter/oil
what you do:
- put quinoa and amaranth in a pot, cover with water and add vegetable stock powder
- let that cook for about 20-25 minutes, so it all gets really really really soft
- in the meantime, wash and rasp zucchini, chop onion and chives into small pieces
- put them in a bowl, as well as spices and eggs
- when the quinoa-amaranth-mash has cooled down a little, add that too
- start kneeding and form little balls or hamburgers
- let a piece of butter (alternatively you can use oil) melt in the pan, fry meatballs in it
- serve with whatever you like: put them in a sandwich, pita or on your salad. I had mine with carrot and cucumber sticks and dip
Mine actually fell apart a little while frying, but I only used 2 eggs. The third one should do it! |
