vegetarian hamburgers/meatballs

what you need:
  • 200g quinoa (what's quinoa?)
  • 50g amaranth
  • 1 tsp vegetable stock powder
  • 1/3 zucchini
  • 1/2 onion
  • pepper, salt, curry
  • 3 eggs
  • 5 stems of chive
  • butter/oil

what you do:
  • put quinoa and amaranth in a pot, cover with water and add vegetable stock powder
  • let that cook for about 20-25 minutes, so it all gets really really really soft
  • in the meantime, wash and rasp zucchini, chop onion and chives into small pieces
  • put them in a bowl, as well as spices and eggs
  • when the quinoa-amaranth-mash has cooled down a little, add that too 
  • start kneeding and form little balls or hamburgers 
  • let a piece of butter (alternatively you can use oil) melt in the pan, fry meatballs in it
  • serve with whatever you like: put them in a sandwich, pita or on your salad. I had mine with carrot and cucumber sticks and dip


Mine actually fell apart a little while frying, but I only used 2 eggs. The third one should do it!
